Rice-Free Gluten-Free Flour Mix

1 lb 6 oz. (22 oz.) quinoa flour

9 oz. tapioca starch

6 oz. potato starch

For those suffering from FPIES (Food Protein Enterocolitis Syndrome) or want to increase the nutritional value of your flour mix, this is a great alternative to the rice-based flour  mixes.

Quinoa has a bit of a bitter wood tone to it, but it is excellent for savory applications.

For sweeter applications, substitute the quinoa flour with sorghum flour.
